Olive Oil
Though olive cultivation had begun to develop in the last centuries of Venetian rule, under the Ottomans it became one of the mainstays of the agricultural economy. Spiralling demand for olive oil in the world market led farmers to cultivate the trees more systematically. Half of all production was destined for export, most often to the port of Marseilles.
